Description

Crispy, golden Garlic Parmesan Roasted Potatoes are the ultimate easy side dish! These perfectly seasoned potatoes feature a crunchy exterior, fluffy interior, and irresistible garlic-cheese flavor that pairs perfectly with any main course. Ready in just 40 minutes with simple ingredients!

Ingredients

Scale
  • 3 pounds Yukon Gold or red potatoes, cut into 1-inch cubes
  • ¼ cup extra virgin olive oil
  • 4-5 cloves garlic, minced
  • ⅔ cup freshly grated Parmesan cheese, divided
  • 2 teaspoons Italian seasoning
  • 1 teaspoon kosher salt (or to taste)
  • ½ teaspoon black pepper
  • ¼ teaspoon paprika (optional, for extra color)
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Cooking spray (optional, for the pan)

Instructions

Step 1: Preheat and Prep
Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it with cooking spray. The high temperature is key to achieving that crispy, golden exterior.

Step 2: Cut the Potatoes
Wash and scrub the potatoes thoroughly (no need to peel them – the skin adds texture and nutrients!). Cut them into uniform 1-inch cubes. Keeping the pieces similar in size ensures they all cook evenly and finish at the same time.

Step 3: Season the Potatoes
In a large mixing bowl, combine the cubed potatoes, olive oil, minced garlic, half of the Parmesan cheese (about ⅓ cup), Italian seasoning, salt, pepper, and paprika if using. Toss everything together thoroughly until every potato piece is well coated with the oil and seasonings.

Step 4: Arrange on Baking Sheet
Spread the seasoned potatoes in a single layer on your prepared baking sheet. Make sure they’re not overcrowded – give them some breathing room! Overcrowding will cause them to steam rather than roast, preventing that crispy texture we’re after. Use two baking sheets if needed.

Step 5: First Roast
Place the baking sheet in the preheated oven and roast for 15 minutes without touching them. This initial roasting time allows the bottoms to develop a golden crust.

Step 6: Flip and Continue Roasting
After 15 minutes, remove the pan from the oven and use a spatula to flip the potatoes, turning them to expose different sides. Return to the oven and roast for another 12-15 minutes until the potatoes are golden brown, crispy on the edges, and fork-tender inside.

Step 7: Add Final Cheese
Remove the potatoes from the oven and immediately sprinkle the remaining Parmesan cheese over the hot potatoes. The residual heat will melt the cheese slightly, creating a delicious, savory coating. Toss gently to distribute.

Step 8: Garnish and Serve
Sprinkle with fresh chopped parsley for a pop of color and fresh flavor. Taste and adjust seasoning with additional salt if needed. Serve immediately while hot and crispy for the best texture and flavor!

Notes

  • For extra crispy potatoes: Pat the cut potatoes dry with paper towels before tossing with oil. Moisture is the enemy of crispiness!
  • Don’t skip the flip: Turning the potatoes halfway through ensures even browning on all sides.
  • Cheese timing matters: Add the final Parmesan at the end to prevent burning. Cheese added too early can become bitter.
  • Oven variations: Every oven is different. Check your potatoes at 25 minutes and adjust timing as needed.
  • Make it spicier: Add ½ teaspoon red pepper flakes or cayenne pepper to the seasoning mix for a kick.
  • Convection setting: If using a convection oven, reduce temperature to 400°F and check 5 minutes earlier.
